The "Capucines" have been faithful to the alsacian tradition which believes that the best is just quite good. Therefor they have committed themselves fervently in the way showed by their elders, having for aim: the constant search of perfection and of the best product.

This requirement of quality is possible thanks to the conjunction of many factors:

Rich and various soils bringing together exceptional geological characteristics (granite from the Schlossberg, marly limestone on the great crus Furstentum, Mambourg and on Altembourg, where the Gewurztraminer and the Tokay Pinot Gris blossom), topological characteristics with a dominance of vines on slopes and climatic characteristics with the best exposures to the sun in the privileged microclimate of the Kaysersberg valley.

Our wine culture is marked by the respect of nature which mothers them, we turn to account the best of tradition without leaving out innovation in our choices of comportment and of treatment of the vines, resting on biological methods. One third of the vineyard is under biodynamy since 1998.
A wine-making process which attempts to take quintessence from each combination vineyards-soils with a research of authenticity and of elegance, and to do a wise synthesis of the terribly actual debate between the notions of soil and vineyard. The best judge is always the tasting stage which must be able to move the senses from the most humble to the most noble grape variety. It should leave behind a happy memory of a privileged moment.
This actually means that the Domaine Weinbach wines are to be found on the best tables throughout the world. They represent Alsace in many countries including the furthest flung which shows how the wines from this region have extraordinary personalities, rich and subtle bouquets, wonderful possibility for food and wine combinations.
